Citrus Fish And Couscous - cooking recipe

Ingredients
    1/2 cup vegetable stock
    2 oz couscous
    1 None orange, zested and juiced
    2/3 cup slivered almonds, toasted
    4 None boneless sea bream fillets
    1 tsp ground cumin
    2 oz baby spinach
    1 None Persian cucumber, diced
Preparation
    Bring vegetable stock to a boil. Remove from heat and pour 1/3 cup over couscous. Add 1/2 the orange zest. Cover with plastic wrap and let stand for 5 mins. Fluff couscous with a fork to separate grains. Stir in 1/2 the almonds.
    Meanwhile, place fish in a shallow microwave-safe dish. Sprinkle with cumin and pour remaining vegetable stock and orange juice over top. Cover with plastic wrap and microwave on HIGH (100%) for 1-2 mins, until fish flakes when tested with a fork.
    Serve fish on a bed of couscous along with spinach and cucumber. Sprinkle with remaining almonds and orange zest.
