Rainbow Coleslaw - cooking recipe

Ingredients
    1 1/2 tbsp maple syrup
    3 tbsp rice vinegar
    1/2 tsp ground toasted cumin
    3 cups finely shredded red and/or green cabbage
    2 cups finely shredded kale
    2 cups sliced red, orange, yellow and/or green pepper
    1/2 cup julienned zucchini
    1/4 cup shredded carrot
    1/4 cup sliced red onion
    1/4 cup chopped fresh cilantro
    1/2 cup chopped salted peanuts
Preparation
    Combine maple syrup, vinegar and cumin. Season. Add cabbage, kale, peppers, zucchini, carrot, red onion and cilantro. Toss to coat. Cover and chill for 1 hour or overnight.
    Toss with peanuts before serving.
