Tabbouleh Couscous - cooking recipe

Ingredients
    9 oz couscous
    1 None lemon, zested and juiced
    3 None tomatoes, deseeded, finely chopped
    1/3 cup fresh flat-leaf parsley leaves, chopped
    1/3 cup currants
    1 None small red onion, finely chopped
    None None falafel, hummus and pita bread, to serve
Preparation
    Place couscous in a large bowl. Add 2 tbsp lemon juice, 1 tbsp lemon zest and 1 1/4 cups boiling water. Cover with plastic wrap and set aside for 5 mins.
    Fluff couscous with a fork then stir in tomatoes, parsley, currants and onion. Season to taste. Serve with falafel, hummus and pita bread.
