Bacon And Vegetable Loaf - cooking recipe

4 oz lean bacon, finely chopped
2 cups grated zucchini
1 cup grated carrots
1 cup grated Cheddar cheese
1 cup self-rising flour
1/3 cup vegetable oil
5 None eggs, beaten lightly
Preparation

Preheat the oven to 350\u00b0F. Grease and line an 8 x 5 inch loaf pan with parchment paper.
Combine the bacon, zucchini, carrot and cheese in a large bowl. Add the flour and toss to coat. Whisk the oil and eggs in a small bowl and add to the dry ingredients. Stir to combine and season. Spread in the prepared pan.
Bake for 45 mins, or until golden and firm to the touch. Cool slightly before serving.
