Fried Chicken With French Fries And Salad - cooking recipe

6 cups vegetable oil, for frying
1/2 cup toasted breadcrumbs
1 None large egg
4 tbsp all-purpose flour
1 - 2 1/4 lb chicken, cut into 8 pieces
1 pkg frozen french fries or potato wedges
2 tbsp olive oil
1 1/2 tbsp white wine vinegar
1 1/2 tbsp fresh lemon juice
1/2 None cucumber, chopped
2 None tomatoes, sliced
1/2 head lettuce, sliced
Preparation

Place the oil in a large pot and heat to 325\u00b0F. Place the breadcrumbs in a shallow dish. Beat the egg in a separate shallow dish and season. Place the flour in a third dish and season. Dip each piece of chicken first in the flour and turn to coat. Tap off the excess then dip in the egg. Finally, dip the chicken in the breadcrumbs and turn to coat. Fry the chicken in the oil for 15-20 mins, until cooked through. Turn if necessary.
Meanwhile, cook the french fries (or potato wedges, if using) in the oven according to the package instructions. Mix the oil, vinegar and lemon juice together and season. Dress the cucumber, tomatoes and lettuce with the vinaigrette. Arrange the chicken and french fries on 4 plates and serve the salad on the side.
