Sirloin Steak With Potatoes Au Gratin - cooking recipe

2 cups milk
1 tbsp fresh thyme leaves, chopped
2 clove garlic
12 None fingerling potatoes, scrubbed and thinly sliced
1.5 oz smoked Cheddar cheese, grated
4 (5.5 oz) sirloin steaks
1 tbsp vegetable or olive oil
1/2 cup red wine
1/2 cup beef stock
3 tbsp fresh flat-leaf parsley, coarsely chopped
1 tbsp butter
None None steamed green beans, to serve
Preparation

Preheat oven to 425\u00b0F. Lightly grease a shallow baking dish. In a saucepan, combine milk, thyme, garlic and potatoes over high heat. Bring to a boil. Reduce heat and simmer, uncovered, for 2 mins. Drain, reserving 1/3 cup milk mixture. Arrange in prepared dish. Drizzle with remaining milk and sprinkle with cheese. Bake for 10 mins, or until potatoes are tender and cheese is golden brown.
Meanwhile, brush beef with oil. Heat a large ovenproof frying pan over high heat, add beef and sear for 2 mins per side. Transfer to oven and bake for 10 mins for medium, or until cooked to your liking. Remove from oven, cover with foil and let rest for 5 mins.
To finish, heat a frying pan over medium heat. Add wine and stock and simmer for 5 mins, or until reduced slightly. Add parsley and butter and cook for 2 mins, or until melted and combined. Remove from heat. Serve with beef and potatoes au gratin. Serve with beans, if desired.
