Warm Chicken And Couscous Salad - cooking recipe

Ingredients
    14 oz couscous
    2 cups hot chicken stock
    1 None rotisserie chicken, shredded
    3 oz sun-dried tomatoes, halved
    2 oz pitted black olives
    3.5 oz feta cheese, cut into cubes
    1/3 cup sliced almonds, toasted
    3.5 oz mixed greens
    1/4 cup olive oil
    1 tbsp lemon juice
Preparation
    Combine couscous and hot stock. Set aside for 5 mins, or until all liquid has been absorbed. Fluff with a fork. Toss with chicken, tomatoes, olives, feta and almonds.
    Arrange couscous mixture on serving plates along with mixed greens. Whisk together olive oil and lemon juice and drizzle over top. Serve immediately.
