Avocado And Roast Beef Salad With Wasabi Dressing - cooking recipe

Ingredients
    1/8 cup sesame seeds
    3 tbsp sunflower oil
    5 pieces bread, crusts removed and cubed
    1 1/8 lbs carrots, peeled and finely grated
    1 None cucumber, peeled, seeds removed and finely grated
    6 slices wafer thin rare roast beef, halved
    1 None avocado, peeled, stone removed and thinly sliced
    3 1/2 tbsp lime juice
    1/4 tsp sugar
    2 tsp wasabi paste
    2-3 tbsp chopped mustard and cress greens
Preparation
    Heat a non-stick frying pan, add the sesame seeds and toast for 2 mins. Remove and leave to cool. Heat 1 tbsp of the oil in the pan and fry the bread cubes over a medium heat for 2-3 mins until golden, turning occasionally.
    For the salad, mix the grated carrot and cucumber in a bowl. Arrange on four serving plates with the sliced beef and fried bread cubes. Sprinkle the avocado slices with a little of the lime juice and arrange on the plates next to the grated salad.
    For the dressing, whisk the yogurt, remaining lime juice, sugar and wasabi paste together in a small bowl and season with salt and freshly ground black pepper. Gradually whisk in the rest of the oil. Drizzle some of the dressing over the avocado slices and scatter over the toasted sesame seeds and mustard and cress. Serve with the rest of the dressing on the side.
