Classic Gazpacho - cooking recipe

Ingredients
    1/2 cup fresh white breadcrumbs
    1 tbsp olive oil
    1 tbsp red wine vinegar
    1 lb ripe tomatoes, peeled, quartered, seeded
    8 oz cucumber, peeled, roughly chopped
    1 clove garlic, minced
    None None finely chopped red onion, to garnish
    None None green pepper, to garnish
Preparation
    Combine breadcrumbs, olive oil and vinegar. Set aside to soak for 10 mins.
    In a food processor, puree soaked breadcrumbs, tomatoes, cucumber, garlic and 1 cup cold water until smooth. Season. Chill for 1 hour.
    Half-fill 4 serving glasses or bowls with ice. Pour soup over top. Serve garnished with red onion and green pepper.
