Chicken And Zucchini Casserole - cooking recipe
Ingredients

5 tbsp olive oil
1 lb (about 4 medium) zucchini, sliced
1/2 lb skinless chicken breast fillets, cut into strips
7 oz creamy goat cheese
4 sprigs fresh mint, leaves chopped
2 tbsp semolina (or all-purpose flour)
1/2 cup walnuts
1/2 cup fresh breadcrumbs

Preheat the oven to 400\u00b0F. Grease an ovenproof serving dish. Heat 1 tbsp oil in a frying pan and saute the zucchini for 3-4 mins. Remove and drain on paper towels. Add 2 tbsp oil to the pan, heat and saute the chicken until browned all over. Season with salt and black pepper and drain on paper towels.
Transfer the zucchini and chicken to a bowl and stir in the cheese, mint and semolina. Season with salt and black pepper and spoon into the dish.
For the topping, saute the walnuts in a dry pan until toasty. Allow to cool and chop roughly. Mix with the breadcrumbs and 2 tbsp oil and sprinkle over the casserole. Bake for 20 mins.
