Lamb, Cheese And Spinach Gözleme - cooking recipe

10.5 oz lamb leg steak
2 tsp ground cumin
1/4 tsp hot paprika
2 1/4 cups all-purpose flour
1/2 tsp kosher salt
10.5 oz spinach
8 oz ricotta cheese
2 tbsp lemon juice
1 clove garlic, minced
1 tbsp finely chopped fresh mint
1 tbsp olive oil
Preparation

Preheat broiler. Sprinkle lamb with cumin and paprika. Broil until cooked through and browned on both sides. Cover and let rest for 10 mins. Slice thinly.
Meanwhile, combine flour and salt in a medium bowl. Gradually stir in 3/4 cup warm water and mix until combined. Transfer to a floured work surface and knead until smooth and elastic. Return to bowl and cover.
Boil, steam or microwave spinach until wilted. Rinse under cold running water until cool then drain. Squeeze out excess water then shred spinach finely. Transfer to a medium bowl along with cheese, lemon juice, garlic and mint. Season to taste.
Divide dough in 2 portions. Roll each portion out into a 10x14 inch rectangle. Divide cheese mixture between the center of rectangles then top with lamb. Fold top and bottom edges of dough over filling, tucking in ends to seal. Brush with oil and broil until browned on both sides and heated through.
Let rest for 5 mins before serving.
