Fried Whitebait With Herb Mayonnaise - cooking recipe

3.5 oz fresh whitebait
1/4 cup all-purpose flour, seasoned
None None vegetable oil, for shallow frying
1/3 cup mayonnaise
1 tsp lemon zest
1 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
Preparation

Dredge whitebait in seasoned flour, shaking off any excess. Heat oil in a large deep frying pan over high heat. Working in batches, shallow fry whitebait for around 1 min, until golden. Remove with a slotted spoon and drain on paper towels.
To make the mayonnaise, combine mayonnaise with lemon zest and herbs. Season to taste. Serve whitebait with herbed mayonnaise.
