Cherry Cheese Strudel - cooking recipe

Ingredients
    10 oz ricotta cheese
    1/3 cup honey
    1 None orange, finely zested
    1/4 tsp ground nutmeg
    1/4 tsp ground cinnamon
    8 sheets phyllo pastry
    9 tbsp butter, melted
    15 oz can cherries, drained, syrup reserved
    1 tbsp slivered almonds
    None None vanilla ice cream, to serve (optional)
Preparation
    Preheat oven to 350\u00b0F. Line a baking sheet with parchment paper. For the cheese mixture, combine ricotta, honey, zest and spices and in a bowl.
    To assemble, layer 8 sheets phyllo, lightly brushing between them with butter. Spoon cheese mixture along long edge of pastry. Top with cherries and roll, folding ends in. Place, seam side down, on the prepared baking sheet. Brush with remaining butter and sprinkle with nuts then bake 25-30 min, until golden.
    Meanwhile, in a small saucepan, heat reserved cherry syrup. Slice and serve with syrup and ice cream, if using.
