Warm Potato And Chorizo Salad - cooking recipe

Ingredients
    8 tbsp olive oil, plus extra for drizzling
    8 oz new potatoes, sliced
    1 None red onion, sliced
    3.5 oz chorizo sausage, sliced
    4 tbsp balsamic vinegar
    1 tsp granulated sugar
    4 None small pickled beets
    4 None small pickles, chopped
    3.5 oz mixed greens
Preparation
    Heat 4 tbsp olive oil in a large frying pan. Add potatoes and saute over high heat for 5-6 mins, or until pale golden on both sides. Add onion and cook, stirring, until soft and golden. Transfer to a large bowl.
    Add chorizo to pan and cook for 1-2 mins, or until crisp and golden. Transfer to the bowl. Add remaining oil, vinegar and sugar to pan. Season and warm through.
    Add beets, pickles and mixed greens to bowl. Add warm dressing and toss to combine. Serve immediately.
