Chocolate-Dipped Honey Bites - cooking recipe

Ingredients
    1/4 cup brown sugar
    2 tbsp honey
    1 tsp baking soda
    3.5 oz dark chocolate
    1 tsp vegetable oil
Preparation
    Line a baking tray with parchment paper. Heat sugar and honey in a medium heavy-bottomed saucepan over low heat until sugar dissolves. Bring to a boil over medium-high heat and cook, stirring occasionally, for 3-5 mins, or until mixture reaches hard-crack stage (275\u00b0F). Remove from heat. Add baking soda and stir until mixture triples in size. Carefully pour onto prepared tray then set aside, undisturbed, for 30 mins, or until set and completely cooled. Break into 12 pieces.
    Place chocolate and oil in a small microwave-safe bowl. Microwave on High (100%) in 30 second bursts, stirring, until melted and smooth. Dip honeycomb pieces in chocolate mixture then transfer to a baking tray lined with parchment paper. Let set. Serve.
