Eggs In Mustard And Chive Sauce - cooking recipe

Ingredients
    2 1/4 lb potatoes, peeled and chopped
    8 None eggs
    1 None small head lettuce
    5 tbsp plain yogurt
    2-3 tbsp + 1 cup milk
    1-2 tsp lemon juice
    2 tbsp butter or margarine
    3 tbsp all purpose flour
    1 cup vegetable stock
    2-4 tsp medium-spicy mustard
    8-10 stems chives, half chopped
Preparation
    Cook the potatoes in boiling salted water for about 25 mins. Put the eggs into boiling water and cook for 9-10 mins. Mix the yogurt and 2-3 tbsp of milk until smooth, add the lemon juice and season to taste.
    Melt the butter in a small saucepan, add the flour and cook for 1-2 mins. Stir in 1 cup of milk, add in the stock and simmer for about 1 min while stirring. Add the mustard and season the sauce to taste. Add half the chopped chives. Drain the eggs, rinse them in cold water and peel. Drain the potatoes. Mix the eggs, potatoes and sauce, sprinkle with chives and garnish with chive stems. Serve the mixture on a bed of lettuce leaves.
