Shrimp And Water Chestnut Balls - cooking recipe

Ingredients
    4 None green onions, finely chopped
    9 oz medium shrimp, peeled and deveined
    1 1/2 tbsp cornstarch
    1/2 tsp salt
    10 None water chestnuts, chopped
    1 None egg white
    1 tbsp rice wine or dry sherry
    1 tbsp chopped fresh cilantro
    2 cups vegetable oil
    None None Sea salt
    None None Chili or plum sauce, to serve
Preparation
    Place green onions, shrimp, cornstarch and salt in a food processor. Pulse to form a coarse paste. Add water chestnuts, egg white, rice wine and cilantro. Pulse until well combined.
    Heat oil in a wok on high heat, until almost at smoking point. Cook heaping teaspoons of mixture in batches for 3-5 mins, until firm and golden.
    Remove with a slotted spoon and drain on paper towels. Sprinkle with sea salt. Serve hot with chili or plum sauce.
