Chocolate Marzipan Meringues - cooking recipe

Ingredients
    2 medium egg whites
    1/2 cup sugar
    3 oz chocolate covered marzipan, chopped
Preparation
    Preheat oven to 225\u00b0F. For the meringue mixture, whisk the egg whites and a pinch of salt with an electric mixer until stiff. Gradually whisk in the sugar. Continue to whisk until mixture is smooth and glossy. Spoon into a large piping bag with a large plain nozzle. Pipe 24 small circles of meringue onto 2 baking sheets lined with parchment paper. Put a piece of chocolate marzipan on top of each then pipe on a little more meringue to cover it. Bake 2 hours. Serve or store in an airtight container for up to two weeks.
