Chili Pork Quesadillas - cooking recipe

Ingredients
    2 tsp vegetable or olive oil
    10.5 oz ground pork
    1 None small green bell pepper, deseeded, finely chopped
    1 None red chili, finely chopped
    1 clove garlic, minced
    1 tsp ground cumin
    1 None large ripe tomato, finely chopped
    1/4 cup tomato salsa + extra, to serve
    2 tbsp ground coriander
    6 None soft flour tortillas
    4.25 oz Cheddar cheese, grated
    None None lime or lemon wedges, to serve
Preparation
    In a large frying pan, heat oil over medium heat. Add ground pork and cook, stirring, for 5 mins, or until browned. Add bell pepper, chili and garlic. Cook for 2 mins. Add cumin and cook for 30 seconds, or until fragrant. Add tomato and salsa. Bring to a boil, reduce heat and simmer, uncovered, for 5 mins, or until thickened. Remove from heat and add coriander. Let cool for 10 mins.
    Lightly coat 1 side of tortillas with oil. Place, oiled-side down, on a flat surface. Top 3 tortillas with ground pork mixture and cheese. Top with remaining tortillas, oiled-side out. Heat a sandwich press or frying pan over medium heat. Cook quesadillas for 2-3 mins, or until tortillas are crisp and cheese melted.
    Cut into wedges. Serve immediately with lime wedges and extra salsa.
