Roasted Onions With Blue Cheese - cooking recipe

Ingredients
    4 None large white onions, peeled, cut into 1 inch-thick slices
    1/4 cup extra virgin olive oil
    4 oz blue cheese, crumbled
    1 tbsp red wine vinegar
    1/2 cup chopped walnuts
    2 tbsp snipped fresh chives
    None None crusty bread, to serve
Preparation
    Preheat oven to 400\u00b0F. Place onion slices on a baking sheet lined with parchment paper. Coat with 2 tbsp oil. Season. Roast for 30 mins. Flip onion slices over and roast for another 10 mins, until tender and edges are browned.
    Transfer to a warm platter and sprinkle with cheese, walnuts and chives. Drizzle with remaining oil and vinegar.
    Serve with crusty bread, if desired.
