Roasted Autumn Vegetables - cooking recipe
Ingredients

1/4 cup olive oil
6 None potatoes, peeled and quartered
1/2 None acorn squash, peeled, seeded and cut into 6 wedges
3 None red onions, peeled and cut into wedges
6 None parsnips, peeled and halved lengthwise
6 None baby beets, trimmed
Preparation

Preheat the oven to 350\u00b0F. Heat oil in a roasting pan in the oven for 5 mins.
Place vegetables in the pan and baste with oil. Roast for 40-45 mins, turning once. Drain on paper towels. Season and serve hot.
