Herb And Olive Fish Fillets Over Potatoes - cooking recipe

Ingredients
    1 1/2 lb potatoes, thinly sliced
    4 cloves garlic, minced
    2 tbsp coarsely chopped fresh flat-leaf parsley leaves
    1/4 cup extra virgin olive oil
    4 (7 oz) mackerel fillets
    4 None anchovy fillets, drained, finely chopped
    12 None pitted black olives, halved
    1 tbsp chopped fresh basil leaves
    None None lemon wedges, to serve
Preparation
    Preheat oven to 400\u00b0F.
    Combine potatoes, garlic, 1 tbsp parsley and 2 tbsp oil in a medium bowl. Arrange potatoes in a baking dish. Bake for 50 mins, or until potatoes are almost tender.
    Arrange mackerel over potatoes and bake for 15 mins.
    Meanwhile, combine anchovies, olives, remaining parsley, basil and remaining oil in a small bowl. Sprinkle over fish and bake for 5 mins, or until mackerel is just cooked through.
    Serve with lemon wedges.
