Beef Samosas - cooking recipe
Ingredients
-
1 lb potatoes, peeled, cut into 1/2 inch cubes
1/2 cup frozen peas
1 tbsp olive oil
1 None onion, peeled and finely chopped
8 oz ground beef
2 tbsp hot curry paste
1 lb puff pastry
None None fruit chutney and salad, to serve
Preparation
-
Place the potatoes in a medium saucepan and cover with cold water. Bring to a boil on high and cook for 8-10 mins, until tender. Add the peas just before end of cooking time. Drain well.
Meanwhile, in a large frying pan, heat the oil on medium. Saute the onion for 3-4 mins, until tender. Brown the ground beef for 5-6 mins, breaking up lumps as it cooks. Stir in the curry paste and cook for 1-2 mins, until fragrant.
Preheat the oven to 400\u00b0F. Line a large baking sheet with parchment paper.
Add the potatoes and peas to the beef mixture. Mix well and season to taste. Cool slightly. Roll the pastry out to a 1/4 inch thickness and cut out 4 (8 inch) circles.
Spoon 1/4 potato mixture over one side of one pastry circle. Fold in half to cover the filling. Press the edges together to seal. Transfer to the baking sheet. Repeat with remaining ingredients.
Bake for 15-20 mins, until puffed and golden. Serve hot or cold with chutney and salad.
