Penne With Vegetable Sauce - cooking recipe

Ingredients
    1 tbsp vegetable oil
    1 None onion, peeled and finely diced
    1 clove garlic, peeled and finely diced
    1 None zucchini, finely diced
    1 None eggplant, cut into cubes and sprinkled with salt
    1 can (28oz) chopped tomatoes
    2/3 lb penne pasta
    1/3 cup Parmesan cheese, shaved
    None None Basil to garnish
Preparation
    Heat the oil in a saucepan and saute the onion and garlic. Add the zucchini and eggplant and saute briefly. Pour in the tomatoes, bring to a boil and simmer for about 10 mins.
    Meanwhile cook the pasta in boiling salted water for about 10 mins, then drain. Serve the pasta and sauce garnished with Parmesan shavings and basil leaves.
