Cheddar Cheese And Red Onion Scones - cooking recipe

Ingredients
    4 tbsp (1/2 stick) butter
    1 None red onion, thinly sliced
    2 cups self-rising flour
    1 cup grated Cheddar cheese
    1 tsp dried basil
    1 tsp ground mustard
    1 cup milk
    1 None egg, beaten
    2 tbsp water
    None None Butter, to serve
Preparation
    Preheat the oven to 425\u00b0F. Lightly grease and line a baking pan with parchment paper.
    Melt 2 tbsp of the butter in a skillet on medium heat. Saute onion 3-4 mins, until beginning to turn golden. Remove from heat.
    Sift flour into a bowl. Rub in remaining 2 tbsp butter, using fingertips, until mixture resembles breadcrumbs. Stir in 1/2 cup of the cheese, basil and mustard. Whisk milk, egg and 2 tbsp water in a medium bowl. Add to dry ingredients and mix quickly to form a soft dough.
    Turn out onto a lightly floured board. Gently press out into a 1-inch thick round. Place on prepared pan and score 8 even wedges with a floured knife. Spread onion over top and sprinkle with remaining 1/2 cup cheese. Season to taste.
    Bake 15-20 mins, until scones are well risen and golden on the bottom. Transfer to a wire rack to cool. Serve warm or at room temperature with butter, if desired.
