Indian Rice With Chicken And Peas - cooking recipe

2 tbsp oil
14 oz skinless chicken breast, cut into strips
13 oz cauliflower, broken into florets
1 None onion, finely sliced
1 tsp cumin seeds
2 cups basmati rice
4 cups chicken stock, heated
1 lb frozen peas
Preparation

Heat 1 tbsp oil in a deep frying pan or saucepan on high. Cook chicken, in batches, for 3 mins each batch, or until just browned. Remove from pan and set aside.
Cook cauliflower in same pan for 7 mins, or until golden. Remove from pan.
Heat remaining oil in pan; cook onion for 3 mins, or until soft. Add cumin and rice and cook for 2 mins, stirring constantly, or until rice is translucent.
Stir in stock, peas and chicken; season to taste. Top with cauliflower and bring to a boil. Cover and reduce heat to low. Simmer for 15 mins, until water is absorbed and rice is cooked.
