Turkey And Eggplant Curry - cooking recipe

Ingredients
    cooking spray
    1 onion, chopped
    2 garlic cloves, crushed
    1 -2 fresh serrano chili, seeded and chopped
    1 teaspoon cumin
    1 teaspoon coriander
    1/2 teaspoon turmeric
    1 small eggplant, cubed
    1 cup turkey breast, cubed
    2 carrots, chopped
    1 bell pepper, chopped
    2 cups chicken stock
    1 tablespoon cilantro
Preparation
    Heat a large pan and add cooking spray. Add onion, garlic, chilies. Cook for 2 minutes. Sprinkle in all spices and cook for additional 2 minutes.
    Add eggplant and turkey. Cook for 5 minutes, or until turkey is browned. Add carrots and red pepper, stir. Pour in the chicken stock.
    Bring to a boil, cover and simmer for 20-25 minutes, until turkey is tender.
    Sprinkle with chopped cilantro and serve.
