Mixed Pepper And Lentil Curry - cooking recipe

Ingredients
    2 onions, chopped
    2 garlic cloves, crushed
    1 red pepper, deseeded and roughly chopped
    1 green pepper, deseeded and roughly chopped
    2 tablespoons curry powder
    1 red chili pepper, finely chopped
    3 1/2 ounces red lentils, dry
    2 1/2 cups vegetable stock
    3 tablespoons tomato paste
    salt & freshly ground black pepper
Preparation
    Heat a large non-stick pan and dry fry the onions and garlic for 1-2 mins until soft.
    Add the peppers and curry powder and cook for a further minute.
    Add the remaining ingredients and simmer gently for 20 minutes until the lentils are cooked, topping up with a little extra vegetable stock if required.
    Serve.
