Roasted Spicy Asian Sweet Potatoes - cooking recipe

Ingredients
    6 large sweet potatoes, peeled and cut into 1-inch chunks
    1 cup unsalted butter, melted
    2/3 cup firmly packed light brown sugar
    2 tablespoons fresh lemon juice
    2 teaspoons Chinese five spice powder
    1/2 teaspoon ground ginger
Preparation
    Coat a 13 x 9 inch baking dish with nonstick cooking spray.
    Add potatoes to the prepared dish.
    In a bowl, stir together the remaining ingredients until well blended; pour the butter mixture over the potatoes and turn to coat evenly.
    *At this point, you can cover and refrigerate for up to 2 days, bring to room temperature before continuing.
    Preheat oven to 375\u00b0; bake until tender when pierced with a knife, 45-55 minutes.
    Remove from the oven and serve hot or at room temperature.
