Pink Gin And Tonic Lollipops - cooking recipe

Ingredients
    2 cups caster sugar
    2/3 cup sugar syrup
    60 ml gin
    125 ml tonic water
    3 drops of pink food coloring
Preparation
    Place sugar, glucose, gin and tonic in a medium saucepan.
    Cook over low heat, without stirring for 10 minutes till sugar dissolves.
    Increase heat to high, bring to boil.
    Cook for 10 minutes till mixture reaches 150 C/300 F on candy thermometer.
    Mixture should be light golden colour.
    Remove from heat , stir through pink colouring.
    Lightly grease 12 lollipop or chocolate moulds.
    Carefully pour in mixture, press a sticj into each one.
    Allow to cool at room temp till set.
    Lollipop moulds and sticks are available at speciality kitchenware stores.
