Angel Hair Pasta With Garden Vegetables - cooking recipe
Ingredients

8 ounces angel hair pasta (or whatever you have on hand)
1 cup snow peas
1 cup mushroom, sliced
1 cup carrot, sliced
1 cup green pepper, sliced
1/3 cup fresh basil
2 garlic cloves
2 tablespoons olive oil
2 teaspoons cornstarch
1 cup vegetable broth (or chicken broth)
1/4 teaspoon salt
3 medium tomatoes, chopped
1/4 cup parmesan cheese
crushed red pepper flakes, to taste (optional)
black pepper, to taste (optional)
pine nuts (optional)
Preparation

Cook pasta according to package directions.
Saute veggies, basil, and garlic in oil over medium-high heat.
Combine broth, starch, and salt, then stir into vegetables. Bring to a boil.
Reduce heat, then cook and stir 3-5 minutes.
Remove from heat and stir in tomatoes.
Top pasta with veggie mix or stir all together, then top with parmesan cheese.
Sprinkle individual servings with red pepper, black pepper, or pine nuts, or just leave as is!
