Low Fat Morning Glory Muffins - cooking recipe
Ingredients

1 1/2 cups flour
1/2 cup whole wheat flour
1/2 cup white sugar
1/2 cup brown sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon clove
2 cups grated carrots or 2 cups zucchini
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup unsweetened coconut
1 apple, peeled and grated
3 eggs, beaten
1 cup applesauce
2 teaspoons vanilla
Preparation

Mix the first 7 ingredients (flours, sugars, baking soda, and spices).
Stir in the rest of the ingredients.
(You can substitute vegetable oil for the applesauce but then it's not low fat anymore!) Fill muffin cups 2/3 full of batter.
Bake for 20 minutes at 350 degrees F.
