Double Apple Muffins - cooking recipe

Ingredients
    1 1/3 cups all-purpose flour
    1 cup oats, uncooked (old fashioned or quick)
    1/3 cup brown sugar, packed
    1 tablespoon baking powder
    1 teaspoon cinnamon
    1/2 teaspoon salt (optional)
    2/3 cup 1% low-fat milk
    1/3 cup apple juice
    1/4 cup canola oil
    1 egg, beaten
    3/4 cup apple, peeled, & chopped (about 1 medium sized apple)
Preparation
    Heat oven to 400F and grease or line 12 muffin cups.
    Combine dry ingredients in a medium bowl.
    Add the remaining ingredients EXCEPT the chopped apple, mixing just until moistened (do not overmix!).
    Gently fold in the apples.
    Fill cups 2/3 full.
    Bake 20-22 minutes or until golden brown.
