Lentil Sloppy Joes In Plantain Buns - cooking recipe

Ingredients
    600 g plantains, peeled
    300 g cooked lentils
    50 g onions, chopped
    100 g bell peppers, chopped
    25 g garlic, minced
    250 ml tomato sauce
    15 ml maple syrup
    1/2 teaspoon chili powder
    1 teaspoon cumin powder
    1 teaspoon smoked paprika
    1/4 teaspoon black pepper
    1/2 teaspoon salt
    30 ml olive oil
Preparation
    Heat olive oil in a pan.
    Sautee onions, bell pepper, and garlic for 2 minutes.
    Add tomato sauce, maple syrup, chilli powder, paprika, cumin, pepper, and salt. Simmer for 5 minutes.
    Cut plantain into 6 inch pieces and split in half crosswise. Flatten each half by pressing with the side of a knife.
    Pan-fry for about 2 minutes per side.
    Assemble the sandwiches.
