Jello With Cucumbers And Cottage Cheese - cooking recipe

Ingredients
    1 (3 ounce) package lemon Jell-O gelatin
    1 cup water, boiling
    1 teaspoon onion, finely grated
    1 -2 tablespoon lemon juice
    1 cup cream-style cottage cheese, small curd (drained)
    1 cup cucumber, finely chopped (I used 1/2 pf an unpeeled English cucumber ~ the one that comes wrapped in plastic wrap)
Preparation
    In a medium or large bowl, dissolve jello in boiling water. Add onion and lemon juice. Chill until partially set, 20 to 30 minutes.
    Beat at high speed until light and fluffy. Fold in cottage cheese and cucumbers.
    Pour into mold or 8-inch square pyrex baking pan. Chill 4 hours or overnight.
