John Wayne'S Favorite Lower-Fat Casserole - cooking recipe

1/2 cup evaporated skim milk
2 tablespoons unbleached all-purpose flour
1/2 teaspoon pepper, freshly ground
2 (4 ounce) cans mild green chilies, diced
16 ounces cheese, grated (reduced fat, four-cheese Mexican Blend)
5 egg whites
Preparation

Preheat the oven to 325 degrees.
Spray a 9x13 inch glass casserole dish with non-stick spray.
Set aside.
Mix the milk, flour and pepper in a bowl.
Combine with the chiles and cheese.
Set aside.
Beat the egg whites with a mixer on high speed until peaks form, about 2 minutes.
Fold into the cheese mixture.
Pour into the prepared dish.
Bake for 35 minutes.
Serve with salsa if desired.
