Ingredients

1 cup firmly packed fresh cilantro leaves
8 spring onions
2 fresh green chilies
1 clove garlic
1 teaspoon fresh ginger, grated
1 teaspoon salt
2 teaspoons sugar
1 teaspoon garam masala
80 ml lemon juice
40 ml water
Preparation

Seed and roughly chop the chillies.
Crush the garlic with the salt.
Place these and the remaining ingredients in a food processor or blender and work until smooth.
Pack into a small dish, cover and chill until ready to use.
