Waldorf Sweet Potato Salad - cooking recipe

Ingredients
    1/3 cup walnuts
    3 cups sweet potatoes, peeled and grated
    1 red apple, chopped (unpeeled, cored and coarsely chopped)
    1/2 cup celery, chopped
    1/2 cup red seedless grapes, halved
    1/3 cup blue cheese, crumbled (optional)
    Dressing
    3 tablespoons apple juice
    2 tablespoons vegetable oil
    1 tablespoon white wine vinegar
    1 teaspoon white wine vinegar
    1 teaspoon sugar
    1/2 teaspoon salt
Preparation
    Toast walnuts in oven at 350 degrees until golden, about 10 minutes. Cool. Place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl.
    To make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.
