Dalamanky Rolls Czech - cooking recipe

    3/4 cup rye flour
    3/4 cup wheat flour
    1 1/4 cups white flour
    1 tablespoon gluten
    2 tablespoons sugar
    3 teaspoons yeast
    1/4 teaspoon pepper
    2 teaspoons salt
    1 tablespoon caraway seed, ground
    3 tablespoons oil
    3/4 cup water, warm
    topping
    1 tablespoon salt, coarse
    1 tablespoon caraway seed
Preparation
    mix yeast sugar and water
    let proof
    add spices oil and then flours gluten knead until smooth let rise until double punch down
    divide into 5 round rolls
    cut a cross into them
    let rise covered until doubles
    sprinkle with water
    sprinkle with topping
    preheat oven to 400 degrees put a bowl of water in baking dish
    bake for 20 minutes until bread is lightly browned.
