Cambray Potatoes - cooking recipe
Ingredients

olive oil
1 red onion, thinly julianne sliced
1/2 cup green bell pepper, julianne sliced
1 cup red bell pepper, julianne sliced
1/2 cup yellow bell pepper, julianne sliced
1/2 cup cilantro, finely chopped
1 1/2 lbs cambray potatoes or 1 1/2 lbs red potatoes
1 tablespoon paprika
2 garlic cloves, finely sliced
salt, to taste
Preparation

Boil potatoes in enough water with salt.
Drain.
In large skillet add olive oil, potatoes, onions, green bell peppers, red bell peppers, yellow bell peppers, cloves, paprika and salt to taste.
Let simmer a few minutes, while turning occassionally.
Remove from heat.
Serve in large serving bowl and decorate with the cilantro.
