Baked Couscous Pilaf - cooking recipe
Ingredients

1 cup couscous (uncooked)
1 -2 cup carrot (diced)
1/2 cup chopped shelled pistachios (You can also substitute cashews or slivered almonds.)
1/2 cup dried currants or 1/2 cup raisins
1 1/4 cups water
1 tablespoon olive oil
salt
pepper
Preparation

Preheat oven to 450 degrees Farenheit.
Mix together all ingredients in baking dish.
Cover.
Bake for 25-30 minutes or until carrots are done through.
