Shallot Salt - cooking recipe
Ingredients

1 medium shallot, minced
2/3 cup kosher salt
Preparation

Mix the salt and shallot and allow to sit covered with plastic wrap for 3-5 days until completely dry.
Stir once daily.
Grind up with a coffee grinder or mortar and pestle until you have a fine grained and well-mixed seasoning.
Dehydrated foods and salts LOVE to reabsorb moisture so remember to store in an airtight jar to prevent your home's ambient humidity from ruining all your hard work.
