White Bean And Barley Soup - cooking recipe

Ingredients
    1 large onion, chopped
    2 garlic cloves, minced
    1 tablespoon olive oil
    2 (24 ounce) cans great northern beans
    4 cups chicken broth
    4 cups water
    2 large carrots, chopped
    2 bell peppers, chopped
    2 celery ribs, chopped
    1/2 cup quick-cooking barley
    1/4 cup parsley
    2 bay leaves
    1/2 teaspoon dried thyme
    1/4 teaspoon pepper
    1 (28 ounce) can diced tomatoes
Preparation
    Saute onion and garlic in oil.
    Combine all ingredients in slow cooker. Cover and cook on low 8-10 hours. Discard bay leaves.
