Ingredients

12 ounces turkey kielbasa, sliced (sometimes I'll use the whole ring which is often 16oz)
1 onion, chopped
1 green pepper, chopped
1 celery rib, chopped
1 1/2 tablespoons cajun seasoning
1 bay leaf
1 (14 1/2 ounce) can stewed tomatoes
3 cups chicken broth
1 1/2 cups white rice
Preparation

Cook kielbases, onion, green pepper, and celery in a large, non-stick saucepan over medium-high heat for 5 minutes.
Add Cajun seasoning and bay leaf. Cook 5 minutes.
Add tomatoes and chicken broth.
Stir in rice and simmer, covered, 15 to 20 minutes until rice is tender.
Remove bay leaf before serving.
