Country Ham With Redeye Gravy - cooking recipe

Ingredients
    2 slices uncooked country ham (1/4-inch-thick)
    2 tablespoons vegetable oil
    1 cup strong black coffee
    2 tablespoons all-purpose flour
    1/2 teaspoon paprika
Preparation
    Cut gashes in fat to keep ham from curling.
    Saute ham in oil in a heavy skillet over low heat 3 to 4 minutes on each side.
    Remove the ham from skillet, and keep warm.
    Combine coffee and flour; add to pan drippings, stirring constantly, until thickened.
    Add paprika.
    Serve with ham.
