Cheesy Breakfast Sausage And Egg Casserole - cooking recipe

Ingredients
    2 cups sliced fresh mushrooms
    1 small green bell pepper, seeded and finely chopped
    1 small jalapeno pepper, seeded and finely chopped (optional)
    2 green onions, finely chopped
    1/4 cup butter
    10 eggs
    1/2 cup flour
    1 teaspoon baking powder
    seasoning salt
    pepper
    2 cups cottage cheese
    2 cups shredded cheddar cheese
    2 cups monterey jack cheese, shredded
    1/2 - 1 lb pork sausage, cooked
    8 slices bacon, cooked and crumbled
    1/2 cup sliced olive (optional or to taste)
    grated parmesan cheese (optional)
Preparation
    Set oven to 375 degrees.
    Butter a 13 x 9-inch casserole dish.
    Saute mushrooms, green pepper green onions and jalapeno (if using) in butter until tender.
    In a bowl, combine/whisk eggs, flour, baking powder; add mushroom mixture, then season with seasoned salt and black pepper.
    Stir in remaining ingredients; mix well.
    Pour into prepared baking dish.
    Sprinkle with grated Parmesan cheese if desired.
    Bake uncovered for 15 minutes.
    Reduce heat to 325 degrees bake 35 mins longer or until a knife inserted in the middle comes out clean.
