Tom Kha Gai (Light) - cooking recipe
Ingredients

13 ounces coconut milk (light)
2 stalks lemongrass
1 piece galangal
1 lb chicken
8 ounces mushrooms
3 tablespoons lime juice
4 tablespoons lemon juice
1 tablespoon fish sauce (nam pla)
2 teaspoons chili paste
1 garlic clove
3 tablespoons scallions
Preparation

Bring coconut milk, lemongrass, and galanga to a boil.
Simmer for 10 minutes.
Add chicken.
Simmer until chicken is partially cooked.
Add mushrooms. Flavor with lime juice, lemon juice, fish sauce, chili paste, and garlic.
Simmer until chicken is fully cooked.
Serve with rice.
