Mashed Potato Pancakes - cooking recipe

Ingredients
    1 cup mashed potatoes
    2 eggs, separated
    1 1/4 cups whole milk
    2 tablespoons butter
    1 cup flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    2 tablespoons sugar
Preparation
    Beat yolks, potato, milk and butter together.
    Sift and add dry ingredients until well mixed.
    Beat room temp egg whites until stiff.
    Fold gently into potato mixture.
    Fry on a hot greased griddle.
