Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon ground cinnamon
3 eggs, separated
1 1/2 cups milk
1/4 cup vegetable oil
3/4 cup sweet potatoes or 3/4 cup yam, cooked and mashed
1/4 cup black walnut, chopped
Preparation

Combine flour, baking powder, salt and cinnamon; set aside.
Beat egg yolks in a medium bowl; add milk and oil, mixing well.
Stir in sweet potato.
Add to flour mixture, stirring until well blended.
Beat room temperature egg whites until stiff peaks form; fold into batter.
Pour into waffle iron (oil iron if not non- stick) and sprinkle with a few walnuts.
