Pancakes For Baby - cooking recipe

Ingredients
    2/3 cup fortified baby food oatmeal (you can play with amounts you use)
    1 cup all-purpose flour or 1 cup whole wheat flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    3 eggs
    1 -2 cup coconut milk
    1 ripe banana
    1 cup steamed carrot
    1 tablespoon blackstrap molasses
    1 tablespoon olive oil
    1/4 teaspoon cinnamon
Preparation
    Place cooled carrots, bananas, milk, eggs, oil, and molasses in food processor and blend until carrots are finely cut up and mixture is foamy.
    In a large mixing bowl, stir together flours, salt, cinnamon and baking powder.
    Stir wet mixture into flour, mixing until just barely combined. Add milk if needed to make batter fairly thin.
    Ladle ~ 2 T amounts onto electric griddle or pan and cook approx 4 min on each side.
